    Air Fryer Roasted Red Skin Potatoes

    Roasted red potatoes in the air fryer make for a healthy and easy side dish. Tossed with olive oil, herbs and spices these red skin potatoes are ready in less than 30 minutes.

    While some people prefer bread or pasta, potatoes are my go-to starch. I have been roasting red potatoes in my air fryer for years. This method takes less time, helping you get dinner on the table faster. 

    Simple toppings of rosemary, salt and pepper make these potatoes an easy side dish that pairs well with many entrees. I’ve even been trying to make these for my kids at lunch, in place of frozen French fries.

    The smaller area of the air fryer ensures the potatoes get as tender or crisp as you want them, in a shorter amount of time. My family like the potatoes with crispy skin on the outside, but still tender on the inside. To make extra crispy potatoes, add a few additional minutes to the cooking time.

    Ingredients

    Just 4 ingredients in this easy potato recipe that makes a delicious side dish.

    • Red Potatoes - Washed and cut into 1" pieces. Leave the skin on the potatoes for extra fiber.
    • Olive Oil
    • Salt & Pepper
    • Rosemary – I used dried but fresh rosemary will work too. 

    How to Make

    Step 1: Wash and scrub red potatoes. Cut off any eyes or bad spots. Cut into even sized 1" pieces.

    Step 2: In a large bowl, toss potatoes with olive oil, salt, pepper and rosemary. Stir to ensure potatoes are coated in oil.

    Step 3: Place potatoes in the air fryer basket and cook for 20 minutes at 400F. Toss potatoes half way through cooking time. Season with additional salt and pepper to taste. Serve and enjoy!

    For crispier potatoes, increase cooking time by 5 minutes for a total cooking time of 25 minutes. 

    Equipment

    I used a 6.5 Qt. Ninja Foodi Air Fryer. Cooking time and temperatures may be slightly different on different size models. If you are using a smaller air fryer, you will likely have to cook this recipe in batches to achieve golden brown potatoes.

    Variations

    This is a standard recipe for how to roast potatoes in the air fryer. Here are some ideas for different seasonings that would work well on the potatoes too.

    • Cajun Spiced Potatoes: Omit the rosemary and add in 1-2 tsp. of Cajun Seasoning. 
    • Lawry’s Seasoned Salt: Omit the salt and use Lawry’s instead. 
    • Old Bay Seasoning
    • Italian Seasoning
    • Parmesan Cheese – Toss with a few tablespoons of parmesan cheese. 

    What other potatoes can I use?

    This recipe also works well with yukon gold or baby potatoes. Russet potatoes will work if that is all you have, but they will not get as crisp. 

    Nutrition

    Potatoes have gotten a bad wrap but there are many nutritional benefits to them. They are a affordable simple side dish and a good source of energy and potassium. They are an excellent source of Vitamin C. Potatoes are also fat free and naturally gluten free making these a great option for those on a gluten free diet. 

    Air fryer potatoes use less oil than traditional frying methods while still achieving a crisp potato. As a dietitian, I recommend these as a healthier alternative to frozen french fries. 

    Oven

    Don’t want to haul out the air-fryer? Make these in the oven by spreading into a single layer on a large baking sheet. Roast at 400F for ~25-30 minutes or until slightly crisp. Stir potatoes half way through cooking time. 

    Serving and Storage

    Serve air fryer potatoes with additional salt and pepper to taste. Maldon sea salt flakes add a nice finishing touch. Makes the perfect weekday dinner side dish to serve with your favorite protein. 

    Store leftover potatoes in an airtight container in the refrigerator. Reheat in the oven, air fryer or microwave.

    For crisper potatoes, cook for 25 minutes.

    How can I tell when the potatoes are done?

    The edges should be crispy and the potatoes should be fork tender. 

    How many carbohydrates are in a serving of potatoes?

    A ½ cup serving of diced potatoes has 12 grams of carbohydrates. Nutrition facts above in the recipe card were based on a heaping 1 cup serving.

      Potatoes turned out browned and crispy. Rosemary added a nice flavor. Will definitely make again. Don’t skip soaking the potatoes. They turn out perfect.
