MONDAY: Slow-Cooker Green Chile Chicken + Fajita Veggies
TUESDAY: Sloppy Joe’s + Oven Roasted Fries
I prefer lean ground beef, but ground turkey, venison or lentils also work well as filling for sloppy joes. Keep the skin on the potatoes for extra vitamins, minerals and fiber. Make these potatoes in the air-fryer in about 20 minutes.
WEDNESDAY: Pork Tenderloin + Sweet Potato and Black Bean Salad
If you have little ones, set aside some roasted sweet potatoes before adding the jalapeño vinaigrette. Link to salad recipe here.
