    Weeknight Meal Plan: October Week 2

    MONDAY: Slow-Cooker Salsa Verde Chicken + Fajita Veggies

    Pour a jar of good-quality Salsa Verde over chicken breasts in the slow-cooker and cook on low for 6-7 hours or high for 3-4 hours. Serve on tortillas or over rice with a side of sautéed bell peppers and onions. Link to chicken recipe here.

    TUESDAY: Sloppy Joe’s + Oven Roasted Fries

    I prefer lean ground beef, but ground turkey or lentils also work well as filling for sloppy joes. Keep the skin on the potatoes for extra vitamins, minerals and fiber.

    WEDNESDAY: Pork Tenderloin + Sweet Potato and Black Bean Salad

    If you have little ones, set aside some roasted sweet potatoes before adding the jalapeño vinaigrette. Link to salad recipe here.

    THURSDAY: Quick Beef Stroganoff + Peas
