    How to make ancho chile puree

    Simple step-by-step instructions on how to make ancho chile puree from dried peppers.

    I have a few recipes that call for ancho chile puree on My Texas Kitchen. Most notably, the Ancho Chile Fudge Pie, which remains my favorite pie.

    Sharing a short post on how you can easily make your own ancho chile puree at home.

    How to make

    1. Rehydrate the dried ancho chiles. To do this, boil some water. Place chiles in a small bowl or liquid measuring cup and cover them with hot water. Place plastic wrap over the top to trap the steam. Allow peppers to sit for 15-20 minutes or until peppers are soft. 
    2. Remove the peppers from the water, set water aside. Cut off the stem and scrape the seeds out. 
    3. Place rehydrated peppers and about 1 Tablespoon of water that chiles were soaking in in a blender. Blend until the consistency of pureed baby food is achieved. 

    Add additional water if needed, but be cautious to not add too much water to dilute the puree. At this point you may add additional seasonings and spices if desired. 

    Storage: Transfer to an airtight container and store in the refrigerator. Will last for a few weeks in the fridge.

    Ingredients
      

    • 3-4 dried ancho chile peppers
    • water

    Instructions
     

    • Place chiles in a small bowl or liquid measuring cup and cover them with boiling hot water. Place plastic wrap over the top to trap the steam. Allow peppers to sit for 15-30 minutes or until peppers are soft. 
    • Remove the peppers from the water, set water aside but do not discard. Cut off the stem and scrape the seeds out. 
    • Place rehydrated peppers and about 1 Tablespoon of water that chiles were soaking in in a blender. Blend until the consistency of pureed baby food is achieved. 
      Add additional water if needed, but be cautious to not add too much water to dilute the puree. At this point you may add additional seasonings and spices if desired. 

    Notes
