With the rising cost of food prices, many families are looking for cheap and healthy dinner ideas. I put together a roundup of some of my favorite healthy and budget-friendly meals that are nutritious and delicious. All of these are go-to recipes that are in my families regular weekly dinner rotation.
30-Minute Dinners
1. Salsa Verde Turkey Tacos

Lean ground turkey is an affordable and high protein option. Premade chunky salsa verde simmers with the meat, resulting in a flavorful turkey taco meat. Serve with your favorite taco toppings and a side of beans for a complete dinner.
2. Skillet Red Beans and Rice

A 30-minute Louisiana inspired skillet dinner features smoked sausage, canned beans, and the Cajun trinity of vegetables simmered and served over rice. A side of fresh cornbread makes this dinner shine.
3. Classic Sloppy Joes

Sloppy Joes were a staple at my house growing up. I think this nostalgic meal should make a comeback on tables across the country. Lean ground beef, venison or turkey may be used. Serve with a side of roasted vegetables or red potatoes.
4. Ground Beef Taco Meat

A savory ground beef taco meat that uses fresh vegetables and spices. Use as a taco filling or to top salads with. This recipe works well with ground venison too.

5. Healthy White Chicken Chili

Made with chicken breasts, fire roasted tomatoes, green chiles, beans and corn this healthy chicken chili feeds a crowd. Top with your favorite toppings such as tortilla strips, avocado, cilantro and shredded cheese. Spices are adjusted to be kid-friendly.
6. Pulled Pork Tenderloin

Pork tenderloins frequently go on sale. This is a great slow cooker meal that is a healthier take on a Southern favorite. Use your favorite BBQ sauce and serve on slider buns or put a scoop of the pulled pork on top of a baked potato. I also have a similar shredded BBQ chicken recipe too.
7. Carne Guisada

This simple recipe for Texas inspired Carne Guisada is made with lean beef stew meat. It has simple ingredients such as canned tomatoes and spices. Serve with fresh tortillas, rice and charro beans for a Tex-Mex dinner.

8. Cilantro and Lime Grilled Chicken Thighs

If you time in advance, this is a simple cilantro lime marinade that makes the most delicious grilled boneless skinless chicken thighs. I like to serve this with rice and sautéed squash, or whatever other vegetable is in season.
9. Oven Roasted Split Chicken Breasts
These large chicken breasts with the bone in and skin on are delicious roasted at a high temperature. Use my dry rub recipe or your own for a tender and flavorful chicken dinner. Serve with vegetables, macaroni and cheese or potatoes for a homestyle dinner.
10. Mexican Shredded Chicken Thighs (Crock-Pot)
This is another dump and go crockpot dinner recipe that readers like for boneless skinless chicken thighs. It makes a flavorful filling for tacos, burritos, quesadillas, enchiladas and casseroles.
