    Healthy White Chicken Chili (Crock-Pot)

    Healthy White Chicken Chili with Beans is an easy kid-friendly slow cooker recipe. Made with chicken breasts, fire roasted tomatoes, green chiles, white beans and corn it is flavorful and nourishing.

    A few things I love about this recipe for Healthy White Chicken Chili with Beans is that it makes A LOT, it’s healthy, it’s easy on your budget and kid friendly! Plus it is very little prep, just place it in your slow cooker and let it cook! 

    Ingredients

    • Boneless Skinless Chicken Breast – I like to trim any extra visible fat. You could also substitute with boneless skinless chicken thighs.
    • Chicken Broth - I like to use Better than Chicken Bouillon if I don't have homemade chicken broth on hand.
    • Fire Roasted Diced Tomatoes - Can substitute diced tomatoes.
    • Green Chiles - I use mild to make it kid-friendly. Use hot if you like spicy! Green Chiles add that necessary tang and unique flavor to the chili.
    • Spices: Chili powder, cumin, oregano, salt, pepper, onion and garlic powder
    • White Beans: Navy or Great Northern Beans. Drain and rinse the beans. Can substitute pinto or black beans or a combination.
    • Cream Style Corn: Gives the soup a creamier consistency without adding a lot of extra fat and calories!
    • Corn Kernels: If you like more corn, add in ½ cup of canned, frozen or fresh corn kernels.

    How to Make Healthy White Chicken Chili

    1. Combine chicken breast, broth, diced tomatoes, green chiles and spices in a slow cooker. Cook on LOW for 6-7 hours or HIGH for 3-4 hours.
    2. Shred the chicken with two forks either in the crock-pot or in a bowl. Add chicken back to crock-pot.
    3. During the last 30 minutes of cooking, stir in the white beans and cream style corn. Ready to serve once beans are heated through.  

    Toppings

    I like to serve White Chicken Chili with Fritos, avocado slices, shredded mild cheddar cheese, and chopped fresh cilantro. 

    To keep it lighter, serve with corn tortilla slices, cilantro, and a lime wedge.

    Healthy White Chicken Chili Recipe

    This recipe is a good source of lean protein from the chicken and beans. An added bonus is fiber from the white beans. Plus a variety of antioxidants and vitamins from the tomatoes and corn. By using cream style corn instead of heavy cream or cream cheese, it keeps the recipe lower in total calories and fat content. 

    If you are trying to stay on the lower calorie side, be sure to watch the toppings. You may consider using corn tortillas instead of Fritos or omitting all together and using avocado slices in place of cheese.

    Spicy Variation

    Baseline this recipe is mild on heat, but big on flavor. To add some heat to this recipe consider:

    • Using hot diced green chiles instead of mild.
    • Adding diced jalapeños to the slow cooker.
    • Increasing the chili powder or adding cayenne.
    • Stirring in hot pico de gallo as a topping.

    Ingredients
      

    • 3 Boneless Skinless Chicken Breasts ( approx 2 lbs.)
    • 4 cups Chicken Broth
    • 14 oz. can Fire Roasted Diced Tomatoes
    • 4 oz. can diced mild Green Chiles
    • 1 tsp. Chili Powder
    • 1 tsp. Cumin
    • 1 tsp. Oregano
    • ½ teaspoon Salt
    • ½ teaspoon Pepper
    • ¼ teaspoon Onion Powder
    • ¼ teaspoon Garlic Powder
    • 2 - 14.5 oz. can Navy or Great Northern Beans drained and rinsed
    • 1 - 14.5 oz. can Cream Style Corn
    • Optional: ½ cup Corn Kernels

    Instructions
     

    • Combine chicken breast, broth, diced tomatoes, green chiles and spices in a slow cooker. Cook on LOW for 6-7 hours or HIGH for 3-4 hours.
    • Once chicken is cooked, shred the chicken. You can do this with two forks in the crock-pot or by transferring chicken to a bowl to shred. Add chicken back to crock-pot. 
    • During the last 30 minutes of cooking, stir in the white beans and cream style corn. Ready to serve once beans are heated through.
    • Topping ideas include Fritos or tortilla strips, avocado slices, shredded cheese, cilantro, pico de gallo and lime wedge.
