An easy recipe for salsa verde turkey taco meat ready in less than 20 minutes! Lean, high protein lunch or dinner option. Makes a flavorful turkey taco meat.

I like to vary my protein sources, so lately I have been buying some ground turkey for a lean protein option for my lunch. Mixing in a chunky, fresh salsa verde, some simple spices and letting the meat simmer results in the best tasting turkey taco meat. Even my husband, who doesn't much care for ground turkey, really liked this!

    • Lots of ways to serve.

    Ingredients

    • Cooking Spray or Olive Oil: If you are using a very lean ground turkey, you will want to spray a little nonstick cooking spray or add some olive oil to the skillet so that the meat doesn’t stick.
    • Ground Turkey Meat: I recommend using at least 93% lean ground turkey. Pictured is 99% lean turkey meat. Nutrition facts were calculated using 93% lean.
    • Salsa Verde: For testing, I used HEB Mi Tienda Fire Roasted Salsa Verde, which is in the produce coolers. I recommend using a chunky salsa verde. This recipe works great with a fresh salsa verde, if available.
    • Spices: Cumin, garlic powder, onion powder, salt and pepper.

    How to make

I love this for an easy high-protein lunch option, ready in 20 minutes!

    1. In a skillet over medium high heat, cook ground turkey until no longer pink. Drain grease, if needed.
    2. Reduce heat to low and stir in salsa verde, spices and water. Let taco meat simmer until water is absorbed, stirring occasionally. Adjust seasoning to taste.

    Serving and Storage

Serving: Serve turkey taco meat warm in a tortilla, as a lettuce wrap, over a taco salad or in a burrito bowl. Lots of possibilities for this high protein taco meat!

Storage: Store leftover taco meat in the refrigerator in an airtight container. Best if consumed within 3 to 4 days.

I like to serve this on a salad with some beans, cheese, extra salsa and crunched up tortilla chips for a hearty and healthy lunch.
