A sure sign of Valentine’s Day is chocolate covered strawberries.
Thinking back, I’ve had two jobs where I made chocolate covered strawberries – HEB and a specialty food store. I always enjoyed working Valentine’s and Mother’s Day, when I would get to spend my shift dipping strawberries instead of the usual.
I wanted to share this recipe, along with tips, to help you successfully make white chocolate-covered strawberries at home.
Ingredients
Make white chocolate covered strawberries at home for a fraction of the cost of store-bought. I made a whole pint of dipped strawberries for around $5.
- Strawberries – Fresh strawberries with stems. Try to choose ones that are medium to large size and are still firm to touch.
- White Chocolate Chips – I recommend Nestle Premier White Morsels. I have also made these with Ghirardelli Classic White Premium Baking Chips.
- Shortening – Just a tablespoon. I recommend Crisco. This is to help the white chocolate be nice and smooth when melted, which makes it easier to dip the strawberries in. Coconut oil will work as a substitute.
Tips on making dipped strawberries
- Wash the strawberries and thoroughly pat them dry a paper towel or clean dish towel before dipping in the white chocolate. This will help the chocolate to stick better.
- Do not use strawberries that are “mushy” or have large juicy, soft spots.
- Be careful to not burn the white chocolate. Microwave in short 20 second intervals stirring after each interval. You can also use a double boiler over low heat to melt the chocolate chips.
- Don’t skip adding the shortening! It is needed for making white chocolate-covered strawberries.
- Use a fork to drizzle extra melted chocolate over the dipped strawberries.
- You can also decorate the dipped strawberries with sprinkles, a dark chocolate drizzle or chopped nuts.
Storage
Strawberries can stay at room temperature if you plan to eat them within 24 hours. After that, extra strawberries should be stored in an airtight container in a single layer in the refrigerator. Strawberries will last in the fridge up to 3 days.
If you are serving these or packing them up for a Valentine’s Day Treat, place each strawberry on a cupcake liner. This will help excess moisture from spreading to other berries.

White Chocolate Covered Strawberries
Ingredients
- 1 pint fresh strawberries
- 2 cups white chocolate chips
- 1 Tbsp. shortening
Instructions
- Wash and pat dry strawberries. Combine chocolate chips and shortening in microwave-safe bowl. Microwave for 30 seconds, followed by 20 second intervals stirring after each interval until white chocolate is melted and smooth.
- Holding the leaves out of the way, dip and twirl each strawberry in the melted white chocolate to fully coat it. Let excess chocolate drip off. Place on baking sheet lined with parchment paper.
- After all strawberries have been dipped in the white chocolate, use a fork or spoon to carefully drizzle extra white chocolate over the strawberries.
