It’s easy to forget how big Texas is until you move 500+ miles away only to remain in the same state. My kitchen tools were packed up two weeks ago and sent to the other side of the state while I stayed behind to finish a rotation. I didn’t want to miss out on #TheRecipeRedux for May so I chose a recipe that didn’t require a lot of time, ingredients or supplies. All you need is access to an oven, baking sheet, knife, spoon and a small bowl for mixing. I think we can all appreciate a simple but elegant appetizer.
May’s theme for #TheRecipeRedux is Small Bites for Sunny Days. Peaches and basil are two things that remind me of summer. Crispy baguette, goat cheese lightly sweetened with honey, juicy peaches and a hint of basil combine in this Peach and Basil Bruschetta.
Peach and Basil Bruschetta is the perfect small bite when you don’t have a lot of time, ingredients or kitchen tools.
In other news --- after 38 weeks, over 1400 hours, 14 sites, five hospitals, and living in three different towns I am finally finished with my Dietetic Internship! Match Day is a happy day but there is no feeling like the day you finish your internship. Passing the registration exam is the last hurdle I have to cross before becoming a Registered Dietitian. Almost there!
📖 Recipe
Peach and Basil Bruschetta
Ingredients
- ½ Baguette thinly sliced
- Olive Oil
- 4 oz. Traditional Goat Cheese log
- ½ tsp. Honey
- 3 Peaches thinly sliced
- 1 tbsp. Fresh Basil
Instructions
- Preheat oven to 350F. Brush olive oil on the sliced baguettes. Bake for 5 minutes or until lightly toasted.
- Mix goat cheese and honey together. Spread on baguette.
- Top baguettes with peaches and basil. Serve immediately.
