I’ve been binge-listening (if that’s a thing) to podcasts on setting routines for your home, how to not spend all your time cleaning etc. I guess after two kids in two years you crave some kind of return to order. To sum up one thing that I’ve learned, it’s that you have to create your own routine rather than just following something someone else made. It has had me thinking about my weeknight dinner series.
I hope that you gain inspiration from the recipes that I share, but I also encourage you to create your own plan that works for your family. Maybe you have rotating theme meals four nights and on the fifth night you pick something new to try. My intention is to share recipes that I have tried and enjoyed. There are a lot of good recipes available on the internet, but unfortunately there are also a lot of bad recipes out there.
MONDAY: Chicken Caesar Pasta Salad
Prep the salad and grilled chicken over the weekend for minimal cook time. Link to recipe here.
TUESDAY: Beef Fajita Tacos
Marinate skirt steak the night before for restaurant-quality fajitas. My favorite fajita sides are grilled veggies, avocado, lettuce, cilantro, pico de gallo and cheese.
WEDNESDAY: Chicken and Broccoli Stir-Fry
This recipe turned out even though I couldn’t find all the ingredients {i.e. sesame oil}. Link to recipe here.
THURSDAY: Hatch Green Chile Turkey Panini + Salad
If you’ve been following this meal plan series, you might of noticed that I REALLY like hatch green chiles. This is a way to incorporate them into a super easy weeknight dinner. I left off the cheese and they were still really delicious. Serve with a simple green salad. Link to recipe here.
