    Jalapeno Sausage Gravy

    Elevate your biscuits and gravy with homemade jalapeño sausage gravy. Made with ground pork breakfast sausage, fresh jalapeños and the perfect ratio of milk-to-flour for a creamy sausage gravy.

    It’s hard to beat a cozy breakfast of homemade biscuits and gravy. Fresh jalapeños add a little Texas flair to the classic Southern dish. Sharing how to make this crowd-favorite recipe in just a few simple steps. 

    Ingredients

    • Breakfast sausage: Ground pork breakfast sausage. I like to use regular or light HEB sausage. The sausage gravy will pick up whatever flavors the sausage contains. I tend to choose a mild flavored sausage. 
    • Fresh Jalapeño: This recipe only needs one minced jalapeño to add some spice. Of course you can increase the amount for extra heat. 
    • All-Purpose Flour: Essential for creating a roux and thickening the gravy. 
    • Milk: Use whole-milk for the creamiest gravy but 2% works great too. 
    • Salt & Black Pepper: Basic seasonings to use and adjust the gravy to your taste.

    Variations

    • Increase jalapeños in the recipe if more heat is desired.
    • Add 2 Tbsp. finely chopped onion, this is my dad's preferred method.
    • Add garlic powder or crushed red pepper for additional flavor.

    How to make

    1. Brown the sausage in a large skillet, cast iron preferred, over medium heat. Add minced jalapeño peppers and continue to cook until meat is browned. 
    2. Sprinkle flour over sausage. Stir and cook for 1-2 minutes. 
    3. Reduce heat to low and gradually whisk in milk. Cook gravy over medium-low heat, stirring frequently until gravy is thickened (~10 minutes).

    Recipe Tips

    • After you add the milk, don't rush the gravy by turning up the heat too high. It is best when cooked over low heat and has time to reach the perfect smooth and creamy consistency.
    • Stir frequently.
    • For a thinner gravy, add an extra splash of milk.

    Serving

    Serve jalapeño sausage gravy over fresh, hot biscuits. Garnish with parsley or extra peppers if desired. 

    Storage: Store leftover sausage gravy in an air-tight container in the fridge. Best if used within 3 days.
