A basic stovetop recipe with rotisserie chicken, corn, white beans and tomatoes. Comes together in 30 minutes! Mild and very kid-friendly.

Kid-Friendly Simple Recipe
The first time I ever made this recipe, my husband asked if we were out of chili powder. I do prefer my meals on the spicy end. But now that my two year old eats table food I have had to make some adjustments in my cooking. I do not want to prepare multiple meals every evening so I am adjusting the spices so we can all enjoy the same meal together.
This recipe is mild and kid friendly. If you prefer spicier, you can always add jalapenos or some canned green chiles. Frozen pre-cooked shredded chicken works great in this 30 minute dinner recipe.

Simple Chicken, Corn and White Bean Soup {Kid Friendly}
Ingredients
- 1 T. Butter
- 1 cup Onion diced
- 4 cups Chicken Broth
- ¼ tsp. Oregano
- ½ tsp. Cumin
- 1 14.5 oz. can Diced Tomatoes and Green Chiles
- 1 15 oz. can Sweet Corn drained
- 2 15 oz. cans White Beans rinsed and drained
- 2 cups Cooked Shredded Chicken
Instructions
- Melt butter in large stockpot or dutch oven. Add onion and cook stirring occasionally until onion is tender.
- Add broth, oregano, and cumin. Bring to boil and then reduce heat to a simmer.
- Add remaining ingredients (tomatoes, corn, beans and shredded chicken). Simmer until all ingredients are heated thoroughly.
Notes
- In place of chicken broth, I use 4 cups water and 1 Tbsp. Better than Bouillon Chicken Base
- White Beans – Navy or Great Northern
