Simple Chicken, Corn and White Bean Soup {Kid Friendly}
A simple and mild recipe with rotisserie chicken, corn, tomatoes and white beans.

Ingredients

Onion
diced

Chicken Broth

Diced Tomatoes and Green Chiles

Sweet Corn
drained

White Beans
rinsed and drained

Cooked Shredded Chicken
Instructions
Melt butter in large stockpot or dutch oven. Add onion and cook stirring occasionally until onion is tender.
Add broth, oregano, and cumin. Bring to boil and then reduce heat to a simmer.
Add remaining ingredients (tomatoes, corn, beans and shredded chicken). Simmer until all ingredients are heated thoroughly.
Notes
In place of chicken broth, I use 4 cups water and 1 Tbsp. Better than Bouillon Chicken Base
White Beans – Navy or Great Northern
Optional – Top with sliced avocado, shredded cheese, cilantro and tortilla strips
