These easy no-bake s'mores protein bites are made with whole-grain oats, peanut butter, honey, whey protein powder, plus all the flavors you expect from a classic s'more. They're an easy snack that's perfect for active kids.

These are a quick no-bake snack I like to have on hand for my kids. Rather than buying so many expensive packaged store-bought snacks, I've been trying to make more at home. These are a real hit and provide energy and protein to keep fueling my kids through sports practices and homework time. My youngest even likes to have them for breakfast when we're short on time.
Ingredients
- Oats: Regular old-fashioned oats provide the base for these energy bites and make them a whole-grain snack.
- Graham Crackers: I tested these with both crushed graham crackers and Golden Grahams cereal. Both give the bites that signature s'mores flavor.
- Peanut Butter: Regular, creamy peanut butter works best. I have not tried this recipe with natural peanut butter that requires stirring.
- Honey: Honey provides sweetness and helps the ingredients stick together.
- Whey Protein Powder: For recipe testing, I use an unflavored whey protein powder. I used Levels whey protein powder.Â
- Marshmallow Bits: Look for the small, dehydrated marshmallow bits sold in a shaker container, like the kind used to top hot chocolate. Regular marshmallows won't work quite the same way in this recipe.
- Mini Chocolate Chips: Mini chocolate chips provide that classic chocolate flavor. I like to use the Nestle Toll House Mini Morsels for this recipe.
How To Make S'mores Protein Bites

- Combine the oats, graham crackers, peanut butter, and honey.
- Stir in the whey protein powder.
- Fold in the marshmallow bits and chocolate chips.
- Chill briefly, then scoop and roll into balls.
Recipe Testing Notes
I tried making these in the food processor, but they turn out just as good in the stand mixer. I find that a melon baller works well for scooping the mixture; then you can roll each portion between your hands to form a ball. I also tend to vary the sizes and make a few smaller ones, my kids feel like they are getting more that way!
