Combine softened cream cheese, egg yolk, sugar and vanilla extract in stand-mixer fitted with paddle attachment. Mix on medium-high speed for 2-3 minutes or until mixture is fluffy.

Makes enough for 1 dozen kolaches filled with 1 Tbsp. cream cheese each.Lemon Variation – Add ½ tsp. lemon zest and ½ tsp. lemon juice. Omit vanilla extract.
