Simple Chicken, Corn and White Bean Soup {Kid Friendly}
A simple and mild recipe with rotisserie chicken, corn, tomatoes and white beans.

- 1 T. Butter
- 1 cup Onion diced
- 4 cups Chicken Broth
- ¼ tsp. Oregano
- ½ tsp. Cumin
- 1 14.5 oz. can Diced Tomatoes and Green Chiles
- 1 15 oz. can Sweet Corn drained
- 2 15 oz. cans White Beans rinsed and drained
- 2 cups Cooked Shredded Chicken
Melt butter in large stockpot or dutch oven. Add onion and cook stirring occasionally until onion is tender.
Add broth, oregano, and cumin. Bring to boil and then reduce heat to a simmer.
Add remaining ingredients (tomatoes, corn, beans and shredded chicken). Simmer until all ingredients are heated thoroughly.
- In place of chicken broth, I use 4 cups water and 1 Tbsp. Better than Bouillon Chicken Base
- White Beans – Navy or Great Northern
Optional – Top with sliced avocado, shredded cheese, cilantro and tortilla strips
