4regular size flour tortillas or whole wheat wraps
Instructions
In a mixer fitted with a paddle attachment, beat together cream cheese, mayonnaise, garlic powder, onion powder and cayenne pepper until mixed.
Add shredded cheese to cream cheese mixture and mix for a few seconds until incorporated. Fold in pimentos and diced jalapenos.
Spread pimento cheese mixture onto tortillas, leaving a small ¼” margin. Roll up tightly into a log. Wrap in saran wrap and place in fridge for 4 hours to chill.
Remove unsliced logs from fridge. Using a serrated knife, trim off the ends of the logs and then cut into even slices.
Notes
Mayo: Use a high quality mayonnaise, I recommend Duke’s Mayonnaise. Cheddar Cheese: Be sure to shred your own cheese for the best consistency in your pimento cheese spread. Substitutions: If you don’t want to make with jalapeños, omit and substitute with 1 Tbsp. minced onion.Tortillas: I like to use Ole Xtreme Wellness High Fiber Tortilla but regular flour tortillas work too.
