Make fried chicken at home with this crispy cornflake fried chicken. The seasoned cornflake breading is flavorful, crisp and makes a delicious homemade chicken nugget.
Soak the chicken: Whisk together buttermilk and eggs. Add chicken to mixture and let it soak for at least 10 minutes, or up to 24 hours.
Make dry mixture: Crush the cornflakes in a food processor or in a gallon bag using a rolling pin. In a large, shallow dish, combine crushed cornflakes, flour, and seasonings.
Coat chicken: Remove chicken from the buttermilk, letting the excess drip off. Toss in the dry mixture, pressing firmly so the coating adheres to all sides. Repeat with the remaining pieces.
Fry: Heat peanut oil in a deep cast-iron skillet to 325-350°F. Carefully place a few pieces of chicken into the oil. Fry for 3 to 4 minutes until light brown, then flip. Continue to fry until the chicken is golden brown and the internal temperature is 165°F.
Keep warm: Remove chicken from the hot oil. To keep chicken warm, you can place it on a baking sheet and keep it in the oven at 200°F.
