Ingredients

– 15 oz. cans black-eyed peas
drained and rinsed
1
– 15 oz. can sweet corn kernels
drained
1
cup
red bell pepper
chopped
¼
cup
purple onion
diced

Tbsp.
serrano pepper
finely diced

Tbsp.
olive oil
2
Tbsp.
lime juice
½
tsp.
salt
¼
tsp.
black pepper
½
cup
cilantro leaves
coarsely chopped
Instructions
Combine peas and veggies.
In a medium-sized bowl, combine black-eyed peas, corn, bell pepper, onion and serrano pepper.
Prepare the dressing.
In a small bowl whisk together olive oil, lime juice, salt and pepper. Pour over black-eyed pea mixture.
Add the cilantro and adjust seasonings.
Fold in cilantro and adjust seasonings to taste. Chill cowboy caviar in the fridge until ready to serve.
Notes
You’ll want to remove loose skins and smashed black eyed peas for the best presentation.
Variations:
For less heat, fresh jalapeño pepper can be used in place of the serrano pepper.
Cilantro may be omitted for those who do not like.
Other popular add-ins include – roma tomatoes, avocado, garlic and olives.
