Cut broccoli crowns into bite sized pieces. In a large bowl combine, broccoli, apple and purple onion. Toss.
In a small bowl, whisk together mayonnaise, honey, red wine vinegar, salt and pepper.
Pour prepared dressing over salad. Gently toss until salad is evenly dressed. Mix in dried cranberries. Cover and chill for one hour before serving. Stir in pepitas just before serving.
Notes
Mayo: Use a high-quality mayonnaise such as Duke's. Garnish top with extra craisins, apples and pepitas.Store covered in the refrigerator for up to 4 days.
