Sweet Potato Chips

- 2 large Sweet Potatoes
- 1 tablespoon Canola Oil
- Non-Stick Cooking Spray
- Powdered Sugar
Slice potatoes using a mandolin slicer. The slices should be around ⅙” thick.
In a medium bowl, combine potato slices and oil. Toss until slices are coated with oil.
Spread sweet potato slices in a single layer on a baking sheet. Lightly spray with non-stick cooking spray. Cook for 10 minutes or until potatoes are fully cooked; flip potato chips half way through. Remove from oven and dust with powdered sugar. Serve warm.
