Pear Muffins

- 1 cup White Whole-Wheat Flour
- ½ cup All-Purpose Flour
- 2 teaspoons Baking Powder
- ¼ teaspoon Salt
- 1 teaspoon Cinnamon
- ½ cup Brown Sugar
- 6 tablespoons Butter melted
- ⅔ cup Light Sour Cream
- 2 large Eggs
- 1 teaspoon Vanilla Extract
- 1 ½ cup ripe Green Pears diced small (about 2 medium)
Preheat the oven to 350F. Grease muffin tin or line with paper muffin cups. Whisk together whole-wheat flour, all-purpose flour, baking powder, salt and cinnamon in a medium bowl.
In a large mixing bowl, combine brown sugar, slightly cooled butter, sour cream, eggs and vanilla. Stir until batter is smooth. Fold in diced pears.
Make a well in the center of the wet mixture and gently stir in the dry mixture. Stir together just until combined. Be sure to not overmix the batter.
Scoop batter evenly into prepared muffin pan. Top with turbinado or sparking sugar, if desired. Bake for 30 minutes in a preheated oven until a toothpick inserted into the center of the muffin comes out clean.
