Healthy White Chicken Chili with Beans
Healthy White Chicken Chili is an easy crock-pot recipe made with chicken breasts, fire roasted tomatoes, green chiles, white beans and corn.

- 3 Boneless Skinless Chicken Breasts ( approx 2 lbs.)
- 4 cups Chicken Broth
- 14 oz. can Fire Roasted Diced Tomatoes
- 4 oz. can diced mild Green Chiles
- 1 tsp. Chili Powder
- 1 tsp. Cumin
- 1 tsp. Oregano
- ½ teaspoon Salt
- ½ teaspoon Pepper
- ¼ teaspoon Onion Powder
- ¼ teaspoon Garlic Powder
- 2 - 14.5 oz. can Navy or Great Northern Beans drained and rinsed
- 1 - 14.5 oz. can Cream Style Corn
- Optional: ½ cup Corn Kernels
Combine chicken breast, broth, diced tomatoes, green chiles and spices in a slow cooker. Cook on LOW for 6-7 hours or HIGH for 3-4 hours.
Once chicken is cooked, shred the chicken. You can do this with two forks in the crock-pot or by transferring chicken to a bowl to shred. Add chicken back to crock-pot.
During the last 30 minutes of cooking, stir in the white beans and cream style corn. Ready to serve once beans are heated through.
Topping ideas include Fritos or tortilla strips, avocado slices, shredded cheese, cilantro, pico de gallo and lime wedge.
