Healthy White Chicken Chili with Beans

Healthy White Chicken Chili is an easy crock-pot recipe made with chicken breasts, fire roasted tomatoes, green chiles, white beans and corn.

Ingredients

  • 3 Boneless Skinless Chicken Breasts ( approx 2 lbs.)
  • 4 cups Chicken Broth
  • 14 oz. can Fire Roasted Diced Tomatoes
  • 4 oz. can diced mild Green Chiles
  • 1 tsp. Chili Powder
  • 1 tsp. Cumin
  • 1 tsp. Oregano
  • ½ teaspoon Salt
  • ½ teaspoon Pepper
  • ¼ teaspoon Onion Powder
  • ¼ teaspoon Garlic Powder
  • 2 - 14.5 oz. can Navy or Great Northern Beans drained and rinsed
  • 1 - 14.5 oz. can Cream Style Corn
  • Optional: ½ cup Corn Kernels

Instructions

  • Combine chicken breast, broth, diced tomatoes, green chiles and spices in a slow cooker. Cook on LOW for 6-7 hours or HIGH for 3-4 hours.
  • Once chicken is cooked, shred the chicken. You can do this with two forks in the crock-pot or by transferring chicken to a bowl to shred. Add chicken back to crock-pot. 
  • During the last 30 minutes of cooking, stir in the white beans and cream style corn. Ready to serve once beans are heated through.
  • Topping ideas include Fritos or tortilla strips, avocado slices, shredded cheese, cilantro, pico de gallo and lime wedge.
