Apple Pie Breakfast Parfait
Vanilla greek yogurt topped with cinnamon apples and a quick homemade oat topping.

- 2 apples peeled and diced
- 2 tablespoons Brown Sugar divided
- ¼ teaspoon Cinnamon
- 1 tablespoon Butter
- 1 tablespoon Flour
- 2 tablespoons Pecans
- ½ cup Oatmeal
- 12 ounces Greek Yogurt Vanilla flavored
In a microwave-safe bowl combine apples, 1 tablespoon brown sugar and cinnamon. Microwave for two minutes or until apples are tender. Set to the side until cool.
Cut flour and remaining 1 tablespoon brown sugar into butter. It should be crumbly. Mix in pecans and oatmeal. Bake at 350 F on foil-lined baking sheet for 8 minutes or until oats are toasted. Remove from oven and set to side.
Allow apple and oat mixture to cool. To assemble, divide apple mixture into two small bowls. Top each bowl with yogurt and oat mixture
