Apple Pie Breakfast Parfait

Vanilla greek yogurt topped with cinnamon apples and a quick homemade oat topping.

Ingredients

  • 2 apples peeled and diced
  • 2 tablespoons Brown Sugar divided
  • ¼ teaspoon Cinnamon
  • 1 tablespoon Butter
  • 1 tablespoon Flour
  • 2 tablespoons Pecans
  • ½ cup Oatmeal
  • 12 ounces Greek Yogurt Vanilla flavored

Instructions

  • In a microwave-safe bowl combine apples, 1 tablespoon brown sugar and cinnamon. Microwave for two minutes or until apples are tender. Set to the side until cool.
  • Cut flour and remaining 1 tablespoon brown sugar into butter. It should be crumbly. Mix in pecans and oatmeal. Bake at 350 F on foil-lined baking sheet for 8 minutes or until oats are toasted. Remove from oven and set to side.
  • Allow apple and oat mixture to cool. To assemble, divide apple mixture into two small bowls. Top each bowl with yogurt and oat mixture
