Protein Pasta + Sauteed Spinach & Sun-Dried Tomatoes

Healthy and filling lunch of protein pasta, spinach, parmesan and sun-dried tomatoes.

Ingredients

  • 1 - 14.5 oz box Protein Pasta cooked and drained
  • 3 Tbsp. Olive Oil
  • 11 oz. Baby Spinach
  • 1 tsp. Italian Seasoning
  • Salt & Pepper
  • ½ cup Sun-Dried Tomatoes chopped
  • ½ cup Parmesan Cheese

Instructions

  • Prepare pasta according to direction on package. Drain and set aside.
  • Heat olive oil in a large skillet over medium-high heat. Add the spinach one handful at a time until all of it has been added to the skillet. Cook until spinach wilts (3-5 minutes). Season spinach with Italian seasoning and salt and pepper to taste.
  • Stir cooked spinach into pasta. Mix-in sun-dried tomatoes and parmesan cheese. Season with additional salt and pepper to taste. Enjoy!
