After a long day of sight-seeing in Baton Rouge we stopped at Juban’s for dinner. Something about a must try Hallelujah Crab. I was feeling tired and maybe a little hangry from the travel and heat. But all that changed when the waitress brought out these perfectly cooked sweet potato chips topped off with powdered sugar. They were AMAZING.

I never thought of having Sweet Potato Chips as an appetizer.
Back at home, it dawned on me …. Sweet Potato Chips – the perfect after school snack! Healthy, slightly sweet, and they won’t spoil your appetite. Keep the peel on for some extra fiber in your diet.

Sweet Potato Chips
Ingredients
- 2 large Sweet Potatoes
- 1 tablespoon Canola Oil
- Non-Stick Cooking Spray
- Powdered Sugar
Instructions
- Slice potatoes using a mandolin slicer. The slices should be around ⅙” thick.
- In a medium bowl, combine potato slices and oil. Toss until slices are coated with oil.
- Spread sweet potato slices in a single layer on a baking sheet. Lightly spray with non-stick cooking spray. Cook for 10 minutes or until potatoes are fully cooked; flip potato chips half way through. Remove from oven and dust with powdered sugar. Serve warm.
