    Sweet Potato Chips

    After a long day of sight-seeing in Baton Rouge we stopped at Juban’s for dinner. Something about a must try Hallelujah Crab. I was feeling tired and maybe a little hangry from the travel and heat. But all that changed when the waitress brought out these perfectly cooked sweet potato chips topped off with powdered sugar. They were AMAZING.

    I never thought of having Sweet Potato Chips as an appetizer.

    Back at home, it dawned on me …. Sweet Potato Chips – the perfect after school snack! Healthy, slightly sweet, and they won’t spoil your appetite. Keep the peel on for some extra fiber in your diet.

    Sweet Potato Chips

    Lightly baked and dusted with powdered sugar. The perfect after school snack!

    Ingredients
      

    • 2 large Sweet Potatoes
    • 1 tablespoon Canola Oil
    • Non-Stick Cooking Spray
    • Powdered Sugar

    Instructions
     

    • Slice potatoes using a mandolin slicer. The slices should be around ⅙” thick.
    • In a medium bowl, combine potato slices and oil. Toss until slices are coated with oil.
    • Spread sweet potato slices in a single layer on a baking sheet. Lightly spray with non-stick cooking spray. Cook for 10 minutes or until potatoes are fully cooked; flip potato chips half way through. Remove from oven and dust with powdered sugar. Serve warm.
