For the past five months my life has been rather mundane. Study. Eat. Sleep. Work. Study. Repeat… You see becoming a Registered Dietitian is not exactly a piece of cake. We take over 45 hours of science courses. On top of that, we have to maintain a job in a nutrition related field or have significant volunteer experience. At the university I attended, Nutrition Majors meet the requirements to enter medical school! This is just one of the reasons why Registered Dietitians are the experts in food and nutrition.
Now that school is over (I graduated!!!) the creative juices are flowing and I’ve been anxious to get back into the kitchen.
Today, I present, Easy Oven-Baked BBQ Chicken.
This summer has seen record-breaking rainfall in Texas (i.e. enough for 8 inches of water to cover the entire state!) Grilling outdoors has simply not been possible.
Maybe it is not raining in your corner of the world, but if you would rather avoid singed arm hair or mosquitoes try out this Easy Oven-Baked BBQ Chicken. Serve with corn and baked beans for a complete dinner.
Easy Oven-Baked BBQ Chicken
Ingredients
- 3 Chicken Breasts skin on
- 2 Tbsp. Olive Oil
- ½ tsp. Smoked Paprika
- ¼ tsp. Salt
- ¼ tsp. Pepper
- ½ cup BBQ Sauce
Instructions
- Preheat oven to 350F. Place chicken in baking dish and rub with olive oil. Sprinkle with paprika, salt and pepper.
- Bake for 30 minutes. Remove from oven and brush chicken with your favorite BBQ Sauce. Return to oven and bake for 20-30 more minutes, or until internal temperature reaches 165F. Remove from oven and top with additional BBQ sauce.
