I set out to make a lightened dessert inspired by the ice cream and this fruit dip was born. I’m okay with the failure, because this tastes like cheesecake and has fewer calories and fat. Plus, unlike store-bought fruit dips, you can control how sweet you want it to be.
Did you know that your taste buds have a maximum threshold for sugar? Meaning once you reach that point, you can no longer taste any additional sweetness. Try slightly decreasing the amount of sugar you put in your coffee or tea over the next week. At the end of the week, put the full amount and see which you prefer. Chances are your taste buds may have adjusted to slightly less sugar.
Back to this rich and creamy vanilla dip. Tastes just like New York Cheesecake, but with far less calories and fat.

- 1 cup Part-Skim Ricotta Cheese
- 2 Tablespoons Lightened Cream Cheese
- 1 Tablespoon Powdered Sugar
- 1 Teaspoon Vanilla Extract
- Combine all ingredients in a food processor or blender. Puree until smooth. Serve with fresh fruit.
