Making perfect pancakes seems to be a skill that I don’t possess. I have a tendency to overcook them and honestly, I find flipping to be somewhat challenging. I typically make waffles instead – they seem more difficult to mess up. Friends, if you have the secret to perfect looking pancakes – please enlighten me!
The Recipe Redux is celebrating FIVE years this month. I love the group the founders have created that provide healthy recipes and credible nutrition information. This month’s theme was to celebrate a fellow Recipe Reduxer.
I chose NourishRD’s. They are two best-friends who run a nutrition communications company. Their food philosophy is “Eat real food, and share it with those you love”. Along with tasty recipes you will find great articles such as those in their “Non-Diet Advice” section. I love their positive attitude and food messages.
I’ve been dying to make their Hummingbird Pancakes for a few months now. The pancakes are a spin from Hummingbird Cake which typically includes bananas, pineapples, coconuts and pecans. The fabulous combination of flavors remind me of a tropical paradise! I wasn’t surprised to learn the cake was developed in Jamaica and later gained popularity in the US during the late 1970’s.
What I love about the Hummingbird Pancakes besides the flavor is the fact that they don’t have any added sugars. They are sweetened with fruit and made with whole-grains. Top it off with extra sliced bananas, pineapple, and coconut for a extra special start to your day.
