There are two types of people in the world – those who like crispy bacon and those who prefer it undercooked. You can’t be both. It is questions like these that need to be addressed early on in relationships. So which are you – crispy or undercooked? We have one of each in our household. My husband has recently taken it upon himself to cook the bacon in our family. I appreciate the help around the house, but I know he really took on the task so that he can cook his bacon till it is barely pink. I don’t understand what there is to like about a piece of undercooked bacon. I like bacon the crispier the better. But to each their own.
When the temps rise we don’t always feel like eating a large meal for dinner. Sometimes a sandwich is just right. And sometimes you don’t have all the ingredients on hand for a sandwich, so this BLT Lettuce Wrap is created. It provides all the great taste you expect in a BLT with fewer calories! That is a win in my book.
These were very refreshing after a long day spent running errands under the Texas sun. There was a little bit of bacon in every bite!
These will become a regular lunch rotation around here and I might even make them as an appetizer.
Go ahead, have three!
- 3 Romaine lettuce leaves
- 2 slices cooked bacon, coarsely chopped
- ¼ cup tomato, chopped
- ¼ of a small avocado
- 1 tablespoon Light Ranch Dressing
- Black Pepper
- Cook bacon according to package directions.
- Wash and dry romaine leaves. Coarsely chop bacon, tomatoes, and avocado.
- To Assemble Lettuce Wraps: Drizzle ranch dressing evenly on each leaf. Top each leaf with ⅓ of the avocado, tomato and bacon. Sprinkle black pepper on top.
